Mmmm, mmmm…good

Wow, I have to share with you all this a-ma-zing recipe for chicken pie that even passed the kid test…I know, right? Here we go!

  • 3 cups finely diced chicken, cooked
  • 1/4 cup flour
  • 1 1/4 cup chicken broth
  • salt and pepper to taste
  • pie crust (I used the store brand pre-made pie crust – just like Pilsbury’s!)

Preheat oven to 375 degrees.

Place bottom pie crust in greased pie plate. Fill with chicken. Sprinkle with flour and gently cover with chicken broth. Salt and pepper accordingly. Cover with top pie crust and pinch edges together. Cut slits in top crust and bake for 1 hour (my chicken and broth came out of the fridge so I baked for 1 hour and 15 minutes).

Let cool for 10 minutes and enjoy with something green Smile – side salad for us. Sooooo good!!

By the way, my trick to cooking chicken if you don’t already have leftoversWinking smile

I put 4 lbs (about 3 large) bone-in chicken breasts (salt and peppered) in crock pot with 2 qts water, 2 quartered carrots, 2 quartered celery, and 1/2 large onion also quartered. cook on high 5 hours (7-8 hours on low) or until falling off the bone. Chicken and broth in one step…Easy peasy!

He wiggled and wiggled…

…and finally his tooth fell out!! We’ve been waiting forever it seems like. Definitely before Christmas, maybe even Thanksgiving! When his new tooth started coming in and the old one hadn’t come out yet, we told him we were going to have to start aggressively wiggling it every day…and what do you know? Out it came! here’s the gap-toothed new Tyler Smile

He wasn’t really into smiling, but as you can see it was the bottom left tooth. And that pillow? it’s a tooth fairy pillow with a little pocket on the front for the tooth/money…how cute is it?! and seriously - let me tell you…it was a whole lot easier for the tooth fairy to sneak in and exchange tooth for money with that pillow on his nightstand rather than under his pillow…I was seriously sweating the entire time. How did my parents do it?!

Coming soon to a wall near you...

Every year I plan to send out Christmas cards...every year, time gets the better of me and I end up not getting to it, or I  just end up buying generic, store bought boxed cards instead of sweet, personalized ones with pics of us :(

THIS YEAR, I am committed to finding a great any pic that my friends and family can stare at, not just during the Holidays, but all year long (because I know you all love us that much ;) and Shutterfly is helping jump start that plan by giving me 50 FREE CARDS!! ka-ching! I looove Shutterfly!!

I have my eye on a few that I love...especially this one and this one! I'm kind of partial to the square, unfolded cards, but it's so hard to choose. Shutterfly has soooo many great ones, AND they make it really easy to create...just upload your pics, pop them in the card template and voila! finito!

If you wanna know how I did it, go here, because I would loooove to get a card from all of you too...and seriously, how can you pass up "free" at the holidays??

From the mouths of babes...

Sitting around the dinner table last night...

Tyler: (with a look of total disgust) Mo-om...what is that?

Camryn: yummmy...pee-ta!

Me: *big sigh* what does it look like Tyler?

Tyler: Weelll, it looks like pizza...but it doesn't look like the pizza you usually get...you know that I only like the pizza you order just for me..
(i.e. Pizza Hut's personal pizza with light cheese and light-no sauce - basically triangle shaped cheese      bread!)

Me: I know buddy, but I thought it would be fun to make our own (big smile)...and I barely put any sauce on it...just for youuu...

Camryn: (noisily munching away in the background)

Tyler: Welll, can I go play when I'm done?

Camryn: More pedda-pony peeez...and pineapple...mmmm... *smackin' lips*

Me: (giving Camryn MY pineapple and pepperoni) yes you guys can go play, but you have to eat at least a few bites of pizza...and ALL of your green beans.

Tyler: (taking the tiniest bite ever - and huuuuuge gulp of milk) I don't like it...but I guess i'll eat it anyway IF you promise NEVER to make it again.

Me: (Dreams of becoming the next Papa John totally crushed and starving) I promise bud, I won't make it again.
